Mill it Fresh!

Because I want the best, the freshest and the most nutritious ingredients, every recipe calling for flour or cornmeal on this site uses freshly milled grains, corn and beans.  I mill my own flours in my own kitchen with my own grain mill.  BTW, you can too!  You can’t get any fresher than that!

See, once any grain is milled (cracked open) you have about 72 hours-ish before 90% of the nutritents are GONE.  Yes, gone!  They oxidize away.  Also, when the wheat and other grains are sifted at the millers, ALL the bran, middlings, germ and germ oil are sifted away.  These contain the bulk of the grain’s nutrients.  Basically, that means the flour and breads made from pre-milled, sifted grains are dead.  Yep!  Dead!  They have very little nutritional, if any value left.  Sooo, pretty much anything with flour or meal at the grocery store, organic or not, is dead, no nutrition.  But, they do add plenty of chemicals and preservatives for your enjoyment.  Hmmm?  That can’t be good.  Hence, the need to mill your own 100% healthy, nutrient dense, good-for-you flours and meals at home!

If you don’t yet mill your own flour and cornmeal simply replace the called-for measure in my recipes with organic (if you can) unbleached all-purpose flour and cornmeal.  I encourage you to make the switch to make your own baked goods with full of life giving nutrients.  It is so easy, you can do it!  Click here to get started.
